Best Hotcakes Ever!!

PancakeMy children and family regularly ask for this for a “breakfast for supper meal” also – sometimes you just want something comforting and this is a great meal after running all over town with two kids in several sports!
Hotcakes (floppy with nice crispy edges)

  • Beat 3 eggs
  • 1 cup of flour
  • 1 small individual container of vanilla yogurt
  • 1 cup milk

Beat it smooth with a nice rotary wrist action.  Still beating add in:

  • 2 tbsp. sugar
  • 1 tsp salt
  • 2 tsp. baking powder
  • 1 tsp baking soda
  • 4 tbsp. oil or melted real butter

Let it stand for 10-15 minutes and then pour 5 inch circles onto a lightly buttered pan – this is what gives it the crunchy edge so add a little butter around the edges if needed with a pastry brush – very worth it!! Cook slowly and only flip when their nice and bubbled on the top.

While the batter is resting put on turkey bacon or sausages on medium low so they can cook while your pancaking.  Wash and cut up fruit such as strawberries, bananas and put a bunch of hash browns in a pan with lots of butter, salt and pepper -let them crisp up while your preparing the pancakes.   Keep an eye on all your pans and turn, flip as needed and everything should be ready at the same time to plate and serve nice and hot with all the fixings!!!

When the kids were really small I used to get up really early when the house was still quiet and put on a coffee for myself and prep this – its so nice when the pitter patter comes down the steps following their noses and I used to get a few minutes with who ever came down first – its seemed to alternate and my kids still talk about how its one of their favourite memories of weekend early mornings!!
